There are hundreds of Chinese egg fried rice recipes on-line. But once you try this simple, delicious and wholesome egg fried rice recipe, you will never look back.

The internet is a massive hodge-podge of recipes for lovers of every cuisine. But when it comes to that perfect Chinese egg fried rice, one will have to skim through a massive 913,000 recipes on Google to find what works best.

Sounds daunting? Here's the good news. Avid chefs need worry no more because here is the easiest and arguably the quickest and tastiest egg fried rice recipe that anyone can whip up with the ingredients in one's larder. Tried and tested before many-a dinner guests , this delicious egg fried rice recipe works beautifully with noodles as well. It is not only delicious and easy to make, it is also low in fatty calories, high in fresh ingredients and super healthy for food lovers of all ages. Go on then, give it a go!

For this simple and delicious dish, you will need the following.

Egg Fried Rice ingredients

  • Plain basmati rice, I cup, washed and boiled until just-done
  • Ginger paste, 1 tsp
  • Toasted sesame seed oil, a dash
  • Soy sauce, a good glug
  • Oil, 2 - 3 tbsp
  • Egg, 1 beaten
  • Green chilli, 1 - 2, fine chopped
  • Pepper (capsicum), 1 cut into small squares
  • Tomato, 1 deseeded and diced
  • Scallions (salad onions), 2 chopped
  • Sweet corn, half can
  • Chicken, boiled and cut into small cubes, 3/4th cup (Optional, if you want to make a Chicken Fried Rice Recipe)
  • Salt, as per taste
  • Ground black pepper, as per taste

This egg fried rice recipe is best prepared in a large non-stick wok, but you can also use a regular pot or large fry pan.

Egg Fried Rice recipe:

  • Add 1 tsp oil to a hot wok and pour in the beaten egg. Quickly stir fry the egg with a spoon and turn it out while it is just-scrambled and soft.
  • Heat the remaining oil in the wok. Add ginger paste and chilli and stir fry on medium heat for a minute. Add the corn, chicken (optional, for Chicken Fried Rice), a pinch of salt and a twist of ground black pepper. Stir fry for 3 - 4 minutes until the corn is just done.
  • Add pepper (capsicum), boiled basmati rice, a good glug of soy sauce, a dash of toasted sesame seed oil and another twist of ground pepper. Stir fry until the rice is well mixed and heated through.
  • Finally add the fresh diced tomato, scallions and scrambled egg. Mix until everything is well heated through and remove from heat. Serve your Egg Fried Rice hot.

Note:

  • Do not cook or steam the tomato or scallions any further. They must stay fresh within the egg fried rice.
